Crayfish Live and thriving in Surrey rivers ! A gourmet treat but also a pest and a threat to indigenous species. These American crayfish (or crawfish) are thought to have been spilled into the wild from a crayfish farm. They breed and survive at the expense of local varieties of fish whose eggs they consume. Catching them at this time of year will not only give you a culinary treat for free but help save the local fish stock. Dark grey to almost black and frisky when caught - preserve on ice and boil for five minutes while still alive. Remove any dead before cooking as these crustaceans spoil quickly. Once they hit the water they turn a stunning intense red color and become all the more appealing alongside a bowl of freshly made lemon and garlic mayonnaise for dipping. A one time regular feature on British menus these had until recently been scarce in local rivers. Why you should eat them ! These darker American tresspassers are taking food away from slower to mature white claw British crayfish which have become endangered.
